It is not often that I get to photograph the prep of a meal from beginning to end with unlimited access. Many chefs and kitchens couldn’t handle me running around their space in the middle of a timed service. Colectivo Felix, visiting from Argentina and on their last US date allowed me full access to their private dinner party and not only let me run wherever I wanted but let me stay for the full 8 hour prep & service. These two work hard at what they do and it is so fun to watch them take a client’s kitchen and make it work. Short of knives, dinner is prepped using pretty much the equipment on hand so improvisation is key. So is space management!
